INGREDIENTS 1 turkey 12- to 14-pounds 4 lemons 3 tablespoons black peppercorns cracked 1 tablespoon coarse salt 3 sprigs thyme 1 stick unsalted butter softened 4 cloves garlic cut in half crosswise 4 shallots quartered INSTRUCTIONS Rinse the turkey in and out with water and pat it dry. Set it in the roasting pan and set aside at room temperature for 20 to 30
